This Enfocus PitStop command allows you to change an internal structure of PDF documents called "ProcSet", which describes procedure sets used for printing to PostScript devices. As the dialogue box itself says, this is a structure that has fallen into disuse within the PDF format (optional from PDF level 1.4 onwards and discouraged at PDF level 2.0).
There are four possible options:

": ProcSets are added. -

Remove ProcSe
t": ProcSet are deleted. -

Do not change ProcSet presence
": The existence or non-existence of ProcSets is not changed. -
"
Add, remove or don't change ProcSet, dependent on the document's PDF version
": In this case, the ProcSets structures are added, removed or left untouched, depending on the PDF level. So, for example, if the PDF is level 1.3, the structures are added; if it is level 1.4 or higher, they are ignored if present and not added if absent; and if it is 2.0, they are deleted.
